Selective Handpicking and Processing of Kaski Green Coffee Beans
- Collecting Fresh Cherries: To ensure quality, we cultivate our own coffee and partner with neighboring farmers to collect fresh cherries. This partnership supports local communities while guaranteeing a steady supply of high-quality green Coffee Beans.
- Selective Handpicking: Our process begins with selective handpicking of well-ripened cherries. At this stage, farmers carefully choose each cherry to ensure only the best beans move forward for processing. As a result, we maintain premium quality throughout the process.
- Floatation and Sorting: Once picked, the cherries are floated in water to remove low-density, immature, or defective ones. Floaters are separated and categorized as Grade B and Grade C beans (commonly known as broken beans). Meanwhile, the remaining high-quality cherries are hand-sorted again for further precision.
- Pulping and Fermentation: We pulp the selected cherries to remove their outer skin. Following this, the beans undergo dry fermentation in plastic barrels or bags for about 20 hours until the pH level stabilizes at 4. By doing so, we enhance the natural flavor of the Green Coffee Beans.
- Drying: After fermentation, we carefully dry the beans on raised bed farm patios until they reach an optimal moisture level of 11%. This step is critical for preserving the beans’ distinct flavor and aroma.
- Transport to Kathmandu: Once dried, we transport the Kaski Green Coffee Beans to Kathmandu for dry milling and further preparation.

- Resting Period: We rest the parchment coffee for at least one to two months. During this time, the beans stabilize and develop a richer flavor profile, enhancing their final taste.
