How We Produce Gorkha Green Coffee Beans at Pea Berry Coffee
At Pea Berry Coffee, we take pride in producing exceptional Gorkha Green Coffee Beans that reflect the unique terroir of Nepal. To begin with, our meticulous process ensures that every bean meets the highest standards of quality. From selective handpicking to careful milling and grading, each step combines precision and passion. As a result, we ensure exceptional quality in every bean. With that in mind, here’s an in-depth look at how we produce our premium Gorkha Green Coffee Beans.
Selective Handpicking and Processing of Gorkha Green Coffee Beans
- Collecting Fresh Cherries: Besides cultivating our own coffee, we partner with neighboring farmers to collect fresh cherries. In doing so, this collaborative approach supports local communities and ensures a consistent supply of high-quality Gorkha Green Coffee Beans.
- Selective Handpicking: Our process starts with selective handpicking of ripened cherries. In this step, farmers carefully choose each cherry to ensure only the best beans make it to the next stage. As a result, we maintain the highest quality throughout the process.
- Floatation and Sorting: Next, we float the cherries in water to remove low-density, immature, and defective ones. Floaters are categorized as Grade B and Grade C beans. Meanwhile, the high-quality cherries undergo additional hand-sorting to guarantee top-notch beans.
- Pulping and Fermentation: The selected cherries are pulped to remove their outer skin. After that, they undergo dry fermentation for about 20 hours until the pH level reaches 4. This step enhances the flavor of the beans.
- Drying: Once fermentation is complete, we dry the beans on raised bed farm patios until they reach an optimal moisture level of 11%. This drying process plays a critical role in preserving the beans’ flavor and aroma.
- Transport to Kathmandu: Finally, the dried parchment coffee is transported to Kathmandu for dry milling and further processing.
Screen Size Grading of Gorkha Green Coffee Beans
To ensure consistency, we meticulously grade the by screen size. This precision guarantees uniformity and optimal roasting results. Below is the screen size breakdown for 1 kg of green coffee:
As a result, this process ensures each batch of Gorkha Green Coffee Beans delivers consistent quality and flavor for roasters.
Resting and Dry Milling of Parchment
- Resting Period: The parchment coffee is rested for one to two months. During this time, the beans stabilize, which enhances their flavor profile and quality.
- Dry Milling: Once we rest the parchment, we husk and mechanically grade it. Afterward, we triple hand-sort the beans to remove any remaining defects. This thorough process ensures that we deliver only the finest Coffee Beans to our buyers.
- Packing: To begin with, to preserve the freshness and quality, we use a two-layer packaging system. Specifically, this approach ensures maximum protection for the beans during storage and transport.
- Grain-Pro Bags (Inner Layer): Airtight and moisture-proof, these bags protect the beans’ flavor and aroma.
- Jute Bags (Outer Layer): Durable 50 kg jute bags provide additional protection during shipping.
For convenience, we also offer 20 kg and 25 kg bags upon request.
